While some of the bosses are harder than others, I always thought that Oath in Felghana's bosses were pretty much perfectly balanced. All of them can (theoretically) be beaten without getting hit if you're patient and know their pattern well enough. If you had to turn the difficulty down to Very Easy to get past Gyalva, you probably didn't figure out his pattern at all -- on Very Easy you can just bum rush all of the bosses and win unless you're considerably underleveled.
To be fair, he's definitely the hardest boss in the game by that point (but I always have more trouble with Chester 2).
I have far more issue with Guilen than I do Gyalva, which tends to vastly differ from most of my friends. I don't find it terribly difficult to no-damage Gyalva if I'm patient and mix in some Ignis Bracelet usage, but Guilen gives me fits on higher difficulties.
I think I had the most trouble with all the Valestein Castle bosses, really. I didn't have much trouble with bosses that SHOULD be hard :P (Chester 2, Garland, Galbalan...)

I didn't have trouble with Garland on either of my playthroughs. I kind of came to the conclusion that he was supposed to be a joke boss or something. Chester 2 gave me a ton of trouble the first time (PSP), but when I replayed on PC it was significantly easier.
The hardest bosses for me were the ones in Valestein Castle too, by far. Even more so than Galbalan - I don't remember my first experience, but the second time was just a matter of remembering how to do it and practicing some. I actually had to grind to beat Zirduros but maybe I was just underleveled. Guilen, well, I beat him without getting the new sword, so that made him a little tougher.
On the other hand, Gildias was probably the easiest boss, I got hit a good bit, but I was basically going all-out aggressive pounding him with the earth ring. Also beat Istersiva without getting hit, but I'd still say it was harder.
Chester 2 is always the hardest boss in the game for me. I just can't manage to beat him without grinding out an extra level or two after getting to the end of the castle.
On the other hand, I don't have too much of a problem with the other bosses in the castle. Zirduros is a little tough and usually takes me a couple of tries, Death Faleon is fairly moderate after I remember his pattern, and I've always found Shutilger to be one of the easiest bosses in the game.
This is always interesting to me, seeing how differently people find Ys bosses. I personally find bosses like Chester and Gyalva easy because they're more about patience and pattern recognition, but bosses you kinda have to bumrush (Death Faleon, Zirduros) give me a lot of trouble. Right/left brain sorta deal maybe? Interesting.
I don't find Shultiger *that* hard compared to the other two Valestein bosses, but in all honesty I'd rather fight Chester than him. Zirduros either goes horribly bad or I kill him in a minute--I generally have to get behind him and spam downstab along with the Ignis and Terra bracelets, and hope he dies before I do. That's about the only way I can beat him because I just can't patience him to death like I can other bosses.

I'm quite certain that's part of an avoidable pattern, actually. I just don't know what it is.
I only play these games on Normal, after all.

There is a pattern recognition aspect in that. It's a recognition of Gyalva's speed vs your own. There's never a change in the speed of that, so you have to take that into account if you're going to risk crossing the bridge again- especially when all the tiles are spike-up.
I actually stayed on the edges of the bridge when the tiles were spike-up on my Nightmare run. A lot of that fight is luck, but a lot of it is knowing when you can and can't take risks like that.
